Sun Dried Tomato Vinaigrette

Ingredients

  • 6 halved sun dried tomatoes, minced
  • 3 salted anchovy filets (in olive oil), minced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon vinegar
  • ¼ teaspoon dry oregano/or basil, minced (optional)

Directions

  1. Whisk the oil and the vinegar together (=emulsify).
  2. Stir in the tomatoes, the anchovies and the oregano/basil (if used)
